Traditional Roast Beef with a choice of delicious Sauces.

2.1/2lb Aberdeen Angus Sirloin Joint (serves 4)
Roll the beef and cook at high temperature for 25-40 minutes (medium rare/medium).

Madeira & Red Wine Sauce with Tarragon

Ingredients
50ml Madeira
100ml Red Wine
50g Chopped Shallots
25g Butter 500ml of Stock
500ml Stock
2 Teaspoons Chopped Tarragon
Salt and pepper to taste

Method
Add Madeira and Red Wine
Reduce to half original volume
Add the stock and the tarragon
Season with salt and pepper
Reduce again and add some butter before serving.

Whisky and wildmushroom Cream Sauce

Ingredients
100g Chopped Shallots
250g Mushrooms
2 Tablespoons Chopped Parsley
Double Measure of Whiskey
100g Butter
100ml of Stock
250ml Double Cream

Method
Saute shallots in butter until soft
Add the mushrooms and then the Parsley
Add whiskey and flame the Mixture
Add the stock and Double Cream
Reduce the Consistency
Season with salt and pepper
